Darren and Lew have looked after us for many years, hand select meat direct from local farms ensuring high quality and welfare standards. Why not pop into their bustling Ringmer shop, their sausages are amazing! They used to be stocked in Harrods don’t you know.
Fresh fish from Sussex shores, stocking from their own catch, brought in by their crew and boat. Also with a range of smoked fish; salmon, haddock, mackerel and trout.
Bakery & Eggs
Susie runs this amazing organic free range egg farm based in Ditchling. We use their eggs across all our menus, cakes, tarts and tortillas. Swing over to their farm shop and pick up a tray yourself, they last for a good amount of time. You can visit their reptile sanctuary whilst you’re there!
Fresh baked authentic pittas made by Einat are a revelation, they are perfect soft pillows of goodness. Recently opened up a little cafe inside her bakery for customers to enjoy her authentic middle eastern homemade foods.
We have used the demi brioche baps from the very beginning for all our bacon and roasted meat baps. Hugely popular in Brighton with their cafes sprouting up all over the place, well worth a visit.
Fruit & Vegetables
Based in Tenterden, they grow a wide variety of main crop and new potatoes. We use Yukon Gold for it’s buttery flavour and wonderful texture, it is like a waxy main crop. Another favourite is their Pink Fir’s which are fantastic for new potato salads. They have a farm shop which anyone can visit and pick up their potatoes along with other home grown products and logs.
Growers of top quality heritage variety fruit from 1949. We use a wide variety of their apples for desserts and sauces as well as pears and other soft fruits. They have a fully stocked farm shop on site where you purchase fruits along with their homemade preserves and other local products.
This family run farm has been growing a range of garlic for three generations. For our main cooking we use their ‘Solent Wight’ and for special occasions their more exotic products like ‘Elephant Garlic’, ‘Oak Smoked’ and ‘Black Garlic’. They have a great range of garlic infused products which can all be brought online.
Family farm close to our kitchen, cutting fresh daily. Harvested by hand early in the morning to be sent out the same day.
A small family run business producing traditionally harvested and bunched watercress. The farm is on the site of a natural spring which provides the constant stream of fresh spring water that is required to grow watercress. If it’s not grown in fresh running spring water then it’s not watercress! You can buy their watercress direct from the farm gate.
A great fruit and vegetable wholesaler stocking seasonal produce from local Sussex farms when available.
Our local pick your own fruit farm, for the freshest, seasonal fruits. We use to top up our own harvest of plums and raspberries. They have a wonderful farm shop selling local produce as well as an onsite cafe.
Dairy
East Sussex dairy mixing traditional and modern methods to produce some exciting bespoke cheeses.
Supply us with high quality unhomogenised whole milk perfect for Baristas. As well as buttery creme fraiche and soft cream cheese.
Mark and Sarah run this award winning Sussex dairy, creating over 15 different cheeses. We love and use many of them, our favourite is the Halloumi and Feta.
Court Lodge is a working organic farm on the edge of the Pevensey Levels in Sussex, run by David and Marian Harding, and a small team of local people. They are wildlife lovers so sustainability and encouragement of biodiversity are important elements of their farming system. We mainly use their yoghurt in our dressings as well as a few cake recipes.

Dry Goods, Sweeteners, Vinegars and Oils
We only use unrefined natural sugar carefully produced to lock in the natural molasses of cane sugar. A heritage British brand producing a range of sugar with a great richness and depth of flavour.
Third generation bee farmers with hives across Sussex creating the highest quality pure, raw and natural honey.
A Sussex wholesaling institution with good principle and purpose. Supplies our cupboard ingredients and organic cereals, dried beans and pulses.
For the best flavour and nutritional value we only use the best local cider vinegar which is unfiltered, raw and organic.
The Estate has been growing oilseed rapeseed for forty years, creating a light oil with a sweet and nutty flavour. Rapeseed oil can handle temperatures much better than olive oil and we use a lot in all our cooking as well as dressings.
They work with British farmers to provide pulses and grains from fair and sustainable UK production, organic where possible. They are particularly interested in searching out less well-known foods, like the fava bean – grown in Britain since the Iron Age but now almost forgotten – and black badger peas. We use their dried pulses and legumes for our one pots and homemade hummus.
Drinks
We love using their Pluckley blend for our everyday tea bags. A wonderful mix of Kenya & Assam loose leaf tea.

Pure fruit juice with no artificial additives, colourings, sugar or water. Made in the traditional way with all their juices bottled, packed and distributed from their farm. We like to user their Discovery Apple Juice because it is the flavour of my childhood scrumping days! But also has the perfect balance of sweet and crisp tartness.
Gary goes to get effort sourcing his beans direct from farms around the world. Hand roasting them to ensure the highest quality bean and roast.
