Progress has granted many gains but also losses. We now have a disconnected relationship with food which can be hugely improved. We believe the past had a more honest and greater appreciation of real food. The story always starts with provenance then prepared and cooked with care. Eating seasonally, using traditional methods that naturally enhance the flavour and nutritional value. Eating communally with friends, family, neighbours and work colleges.

We deliver an honest and enriching experience. Reconnecting our clients to our local food networks and creating a better balanced life.

We strive for the lowest environmental impact with a common sense sourcing and service policies.

What is sustainable for the individual may not be the case locally or for the planet. It is a balance that is never perfect but we do our best.

Fun and informal 'street food' styled service.

We believe catering should complement a space, time, event and not unnecessarily control it. Time together is best remembered through it's interactions so these should be maximised. 

A flexible approach to fit your requirements and with the 'know how' to deliver our menus both in and out doors. 

Food served quickly from a single point, placed on communal sharing tables or delivered ready meals.  

We do not offer the traditional seated fine food dinning experience.

A genuine and personal level of service, you cannot buy with agency staff.

The person you speak to over the phone will most likely be the same person helping to prepare, cook and serve your food. 

We could not deliver on our promises and goals without a happy team behind us. My wife, Kate is a qualified nutritionist and caterer of 20 years. My mum and dad, Annie and Tony offer continual support in the kitchen and allotment. But we are always looking to work with similar minded people. Prizing a good attitude over experience.

My Story


My name is Dan…

Meaning and emotional connection has always been important to me and my career choice. For 16 years, prior to Spade and Spoon, I had the enormous pleasure of being a music consultant to film and advertising. Picking the right music to emotionally connect with the audience. This was one of my very first adverts >>>

Over time, my values and circumstances changed and started to look for new challenges. Having moved back to my home town, Brighton, I wanted to connect with a local community. Keeping the same passion and creativity of the music industry but in a more grounded and authentic way. A desire to make a more genuine difference to clients lives.


Food and music share so many similarities and are essential to how we sustain and enrich our lives. Food was the obvious step so I got myself a trailer, ‘Rosie’ and embarked on my own self styled catering university at events and festivals.

Like most start ups, I didn’t have a clue what to do at the start and relied heavily on the support of friends and family. There were ups and downs, hard work and fun. But the change has all been worth it.

There is enormous satisfaction being part of a wider food network, seeing clients enjoy our food and story. It’s taken time but I can now see how my life’s goals can be fulfilled in food. There is still a lot to learn and do with our service. But Spade and Spoon has a direction I am proud and excited about.

We want to keep finding more ways adding value to our local community and solutions to our clients.
